I have been trying to make dinners that would appeal to my husband. Although he is vegan he is not raw. He does consume high amounts of raw though. Tonight I have made raw vegan tacos. I have made a walnut “meat” crumble. For myself I have made a dill dip to have with the veggies.
Chopping veggies on a small rv table is not an easy task! Raw vegans consume a ton of produce. I literally have veggies sprawled out all over the place chopping and stacking one at a time. It has been an adjustment but one I gladly get used to!
Raw vegan doesn’t have to be difficult. If you google or watch YouTube videos it can seem super overwhelming. For me personally I like to keep it very simple basic ingredients. Fruits and veggies. I will use spices occasionally and little amounts of nuts. To feel my best just the fruits and veggies is what I want.
