Thought I would start sharing some of my recipes here!
You can make these in cute little mason jars like pictured or little bowls, whatever you have available.
Bottom layer: in your food processor on high combine 10 medjool dates, 1/4 cup shredded coconut, and 1 tbs carob powder. Then use this mixture as the bottom layer in parfait containers.
Top layer: in your blender mix on high speed: 1 peeled zucchini, 9 soaked medjool dates AND 1 tbs of the water from soaking, 1/2 cup shredded coconut, juice of 2 lemons, juice of 1 lime and zest of 1 lime. Pour into your parfait containers. You can eat right away but for best result I suggest freezing for 30-60 min to firm up a little. If using small jars freezing time won’t be long but larger containers will require longer time.
Its the holiday season and no reason you cannot enjoy a little treat.
